Radish & Radish Leaf Pesto with Avocado on Brioche

Seniors also require wholesome food to get all the right nutrients to take care of their body.

 
Ditch the standard ham or turkey and try this easy to assemble sandwich for a unique lunch. The pesto and avocado mingle for a delicious flavor and offer more health benefits than the lunch meat and mayo you're used to. If pesto doesn't tickle your fancy, try mustard or olive oil as a substitute. 
 
Ingredients
1 brioche roll, halved
2 teaspoons salted butter, softened
1/4 avocado, sliced
2-3 tablespoons radish leaf pesto (recipe follows)
2-3 radishes, sliced thinly
1 red butter lettuce leaf
Squeeze of lemon (optional)
 
Directions
 
Toast the brioche lightly if it’s anything but super fresh. Spread the bottom with the butter, then mound on a thick layer of radish leaf pesto. Arrange the radish slices, then sprinkle on some salt. Top with avocado, then lemon and salt, then the lettuce leaf. Add the top of the brioche bun, cut in half, and eat!
 
Radish Leaf Pesto

Ingredients
1/4 cup pecans
1 small clove garlic
Sea salt
1 large bunch radish leaves, trimmed of any brown spots and washed well
Lemon
Olive oil

Directions

Combine the pecans, garlic, and salt in a food processor and process until pulverized. Add the radish leaves and continue to process, adding just enough olive oil to turn into a thick paste, in their neighborhood of 3 tablespoons. Squeeze in some lemon, then taste for salt. Radish leaf pesto will keep for 1 week in the fridge.
