Mango-Lime Ricotta Parfaits

Try these simple parfaits for a healthy snack or bring a tray to your next barbecue for a cool summer treat. Low in sugar and fat, this dessert is just enough to please your sweet tooth without the extra calories. Also great for sharing with senior clients who may have low sugar and low fat diets. 

Ingredients

            2 ripe mangoes, peeled, pitted, and cubed

            1 tablespoon sugar

            1/2 teaspoon grated lime zest, plus 1 tablespoon fresh lime juice

            1 1/2 cups part-skim ricotta

Directions

In a bowl, toss together mangoes, sugar, and lime zest and juice. Let stand 20 minutes. Top ricotta with mango mixture, and serve.
