Basil-Shrimp Pasta Salad

Basil-Shrimp Pasta Salad

Ingredients

  • 12 oz farfalle (bow-tie pasta) 
  • 1 C shrimp
  • 6 pieces of bacon, chopped
  • 3 garlic pieces, chopped
  • 3 Tablespoons of lemon juice
  • 1 Tablespoon olive oil
  • 1/2 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 3/4 C parmesan cheese

Instructions

  1. Cook pasta, drain & place in large bowl. 
  2. While cooking, sautee shrimp & chopped garlic in a splash of olive oil. 
  3. When cooked, add to the pasta & mix well. 
  4. Cook bacon & crumble pieces into pasta. 
  5. Add lemon juice, salt, pepper, olive oil, basil & parmesan cheese. 
  6. Mix thoroughly & serve immediately. 
  7. Garnish with avocado optional.
