Senior caregiving can be demanding and after a long day's work of caregiving, it is important to "take care of the caregiver".
This recipe delivers a healthy twist on hummus.
Caregiverlist Recipe-of-the-Week: hummus and Monterey Jack Wraps
1 1/2 Cups Prepared Hummus
4 Large Flour Tortillas (at least 12-inch diameter)
1 Cup Shredded Reduced-Fat Pepper Monterey Jack Cheese
1 Cup Chopped Red Bell Pepper
1 Cup Shredded Carrots
3 Baby Cucumbers, Thinly Sliced
2 Scallions (White and Green Parts), Chopped
2 Tomatoes, Thinly Sliced
2 Cups Shredded Romaine Lettuce
Directions: For each wrap, spread hummus over the top 2/3rd of tortilla. Layer on cheese, peppers, carrots, cucumbers, scallions, tomatoes and lettuce in a row in the center.
Compress filling slightly and then fold the bottom of the tortilla over the filling. Fold in about 1 inch of the sides and roll firmly away from you, compressing the filling as you roll.
Cut each wrap in half on a diagonal.
Tip: If you can't find baby cucumbers, use 1/3rd of a peeled English cucumber.
